Slow-Cooked Beef Brisket — Perth's Autumn Sunday Signature

Autumn in Perth is when the slow-cooker comes out of the pantry, the oven earns its keep, and every serious home cook rediscovers cuts of meat that reward patience over technique. Brisket is the king of this category — a big, marbled, connective-tissue-rich cut that transforms from tough to falling-apart tender over a proper seven-hour cook.

Shopping list

Ingredients for 8 people (plus leftovers):

  • 1 × whole beef brisket, 3.0–3.5 kg — from THE BUTCHER BOX or in our Family Feast Box
  • 3 tablespoons sea salt flakes
  • 2 tablespoons cracked black pepper
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon cayenne pepper (optional)
  • 500 ml beef stock
  • 250 ml dark ale or stout (Perth's Feral Watermelon Warhead or Little Creatures Rogers work brilliantly)
  • 2 brown onions, sliced thick
  • 6 cloves garlic, smashed
  • 2 fresh bay leaves

Method

Step 1 — The rub (the night before)

Combine the salt, pepper, paprika, garlic powder, onion powder, brown sugar and cayenne in a small bowl. Pat the brisket dry with paper towel. Rub the seasoning aggressively into every surface, including under any fat cap. Cover loosely with foil and refrigerate overnight — the salt penetrates and dry-brines the meat while the surface dehydrates for a better bark.

Step 2 — Come to room temperature (60 min)

Take the brisket out of the fridge 60 minutes before you start cooking. This is a big cut — it needs longer than a steak to warm through.

Step 3 — Sear for the bark (25 min)

Preheat oven to 230 °C fan-forced. Place the brisket on a rack in a deep roasting tray, fat-side up. Roast at 230 °C for 20–25 minutes to develop the initial dark, caramelised bark. This is your only high-heat window — the rest of the cook happens low and slow.

Step 4 — Add the braising liquid, drop the heat

Reduce oven to 130 °C fan-forced. Add the sliced onions, smashed garlic, bay leaves, beef stock and dark ale to the pan around (not on top of) the brisket. Cover the tray tightly with two layers of heavy-duty foil, sealing every edge. If any steam escapes during the cook, the brisket will dry out.

Step 5 — The five-hour slow braise

Roast at 130 °C for 5 hours. Do not open the foil. Do not check. Do not baste. Set a timer, go for a walk along the Swan River foreshore, come back and the whole house will smell like a Texan barbecue joint.

Step 6 — Check tenderness

At the 5-hour mark, remove the foil. Insert a large fork into the thickest part of the brisket. It should slide in with almost no resistance. If not, re-cover and return to the oven for another 30–45 minutes.

Step 7 — Final bark development (30 min)

Increase oven to 200 °C. Return the brisket to the oven uncovered for 25–30 minutes to firm up the bark. Baste every 10 minutes with the pan juices.

Step 8 — Rest — MINIMUM 30 minutes

This is the single most important step and the one most home cooks skip. Pull the brisket out. Cover loosely with foil and rest for a full 30 minutes. The internal juices need time to redistribute — cutting into a brisket too soon means half your dinner ends up on the board.

Carving

Brisket has two grains — the point (fatty end) and the flat (lean end) run in different directions. Look carefully at the fibre direction and always slice against the grain, in 5-8 mm slices for the flat and larger chunks for the point. Serve on a warmed platter, spoon over pan juices, and hand-tear the point if it wants to fall apart naturally.

What to serve alongside

Brisket is rich. Balance it with:

  • Slaw — red cabbage, apple, carrot, apple cider vinegar, mustard, minimal mayo
  • Roasted sweet potatoes with sea salt and rosemary
  • Pickled red onions on the side (see recipe below)
  • Crusty sourdough for mop-up duty

Quick pickled red onions: slice 1 red onion thin, pack into a jar, cover with hot 50/50 red wine vinegar and water, add 1 teaspoon salt and 1 teaspoon sugar. Refrigerate 2 hours. Keeps 2 weeks.

Wine and beer pairing

A Barossa shiraz or a McLaren Vale grenache-shiraz blend pairs perfectly — enough weight to match the richness, dark fruit to complement the smoky rub. For beer, stick with the same style used in the braise — a full-bodied ale or milk stout.

Monday leftovers — the brisket taco

The best-kept secret of a Sunday brisket is Monday's dinner. Warm sliced brisket in the pan juices, pile onto warm corn tortillas, top with:

  • Pickled red onions
  • Fresh coriander
  • Sliced avocado
  • Crumbled feta
  • A squeeze of lime
